This creamy salad dressing or veggie dip combines the tangy flavours of Greek yogurt and apple cider vinegar with the delightful sweetness of elderberry juice and honey. Ingredients: 

1 cup plain Greek yogurt

2 tablespoons Kootenay elderberry juice (adjust to taste)

1 tablespoon honey (adjust to taste)

1 tablespoon Dijon mustard (or your preferred mustard)

1 tablespoon apple cider vinegar

1/2 teaspoon garlic powder

 1/4 teaspoon salt (or to taste)

Optional: Fresh herbs (like dill or parsley) for added flavor

Instructions:

  1. In a medium mixing bowl, combine the Greek yogurt, elderberry juice, honey, Dijon mustard, apple cider vinegar, garlic powder, and salt. Whisk the ingredients together until smooth and well combined. Taste the dressing and adjust the sweetness by adding more honey or elderberry juice if desired. You can also adjust the tartness by adding more apple cider vinegar.
  2. Add Fresh Herbs (Optional): - If using, finely chop fresh herbs and fold them into the mixture for added flavor.
  3. Chill: - For the best flavor, cover the bowl and refrigerate the dressing/dip for at least 30 minutes to allow the flavors to meld.
  4. Serve: - Use the creamy elderberry dressing over your favorite salads or as a dip for fresh vegetables like carrots, celery, bell peppers, or cucumbers.
  5. Storage: - Store any leftovers in an airtight container in the refrigerator for up to one week.

Tips:
